Express Lunch – Lettuce Wraps

One of my favorite lunches is lettuce wraps. They’re easy – and so flexible. You can put anything you want in ‘em.

Get a nice, big head of Romaine lettuce. Take off a few leaves and wash them out. Now, chop up any and all veggies that you’d like.

Some typical veggies I use are purple cabbage, shredded carrots, tomatoes, cucumbers, and zucchini.

You can also use spread – or make your own. I make one that’s a little bit of avocado, garlic, and onion all mashed together.

Once you’ve got all your ingredients together, build your wrap. Place the veggies in middle of a romaine leaf and then wrap it up like a tortilla.

Ahhhh refreshing!

    Love this! Great idea! I used to do this with left over taco fillings. Think I’ll dapple in the kitchen now and see what goodies I have to stuff!

    Yeah – that’s the beauty of this lunch (or snack… or dinner…) – you can use whatever you have on hand.

    And – it’s so filling!

    What a great idea!! Better than using pita…

    While I’m not going raw any day soon, I embrace the entire philosophy of eating as close to natural as possible.

    This recipe idea definitely helps me do more of that… and my kids will love this too!!
